New Year Eve evening is not really the night when you can yourself from family and friends to spend big time in the kitchen. Cousins and friends drop in, its a time of sitting in with your family and loved ones. The year 2019 is bidding us adieu and a fresh new decade is knocking at our door. We got a little more enriched with our experiences, got a bit wiser maybe… happier or sadder. Whatever life threw us in 2019, we do tend to recount them in the last evening of the year going away, never to return.
But we need to eat too, and if we are planning an elaborate lunch or dinner outing on the first day of the new year, which we generally do, it is home fare we usually prefer, the night before. So I just sneaked into the kitchen for less than half an hour (20 minutes more or less) and prepared this ultra-easy fried-rice of a dinner, which I wanted to share with you.
The great thing about this recipe is that you get to make it with the things that are usually in your fridge, in this season.
Mixed Fried Rice
(Serves 3 comfortably)
You need: Basmati/ any parboiled rice – 2 cups,
Diced cauliflower, french beans, carrot – 1/2 cups each
Shelled peas -1/2 cup
Diced Mushrooms -1 cup
Sweet corn and soya nuggets – 1 cup
Tomato, Onion, garlic (finely chopped) 3/4 cup,
2 green chillies (finely chopped)
Ghee / Any refined oil – 2 tablespoons,
Salt to taste,
Black pepper powder – 1 teaspoon
Water – 1 glass approx
PREP: 1) Wash the rice
2) Blanch the mushrooms
3) Soak the soya nuggets in warm water for 6-7 minutes
COOKING: Heat the ghee/oil in pressure cooker and add the finely chopped tomato, onion, garlic and chillies. Stir some. When it dries just a little, add the soya chunks (water squeezed out from them) and stir. Add the cauliflower, french beans, carrot and continue stirring. Sprinkle salt as per your taste and stir thoroughly. After 2-3 minutes, add the rice and sweetcorn and continue stirring. Again after 2-3 minutes, add the peas and mushrooms, sprinkle the black pepper powder and mix everything in the cooker. After 1 minute, add enough water to cover the mixture in the cooker. Now cover the lid of the pressure cooker and wait for two whistles.
After the steam releases, your simple but yummy fried rice is ready to be served. Garnish with chopped coriander leaves and serve with yoghurt and cucumber-tomato-onion salad for that extra health and taste.
If you have prepared with ghee, the aroma will be even more tempting.
If you prefer this fried-rice to be non-veg, you can toss in and mix well egg bhurji (scrambled eggs), steamed and/or lightly fried shrimps and/or boiled and shredded chicken just before serving.
